Spicy Pumpkin Pasta with Walnuts
I’m pretty sure I ate pasta for every meal over the weekend. No regrets.
It’s February, it’s cold, I need comfort food. Quick and easy comfort food at that! This spicy pumpkin pasta barely takes any longer than it takes to make mac & cheese. It even gives you that same creamy satisfaction… but with a kick!
Before I go any further with this recipe, I’d like to give a shout out to my new black Ikea dishes. Beautiful, simple but dramatic, and like, $35 for the whole set. I don’t think I’ve ever adulated harder than I did when I squealed in excitement over the looks of these in my cupboards. #ThisIs30
But let’s get going, shall we?
Spicy Pumpkin Pasta
Ingredients:
1 Jar Cucina Antica Pumpkin Pasta Sauce
2 tbsp olive oil
3 cloves garlic
1 tsp (or more) chili flakes
3 cups spinach, chopped
walnuts
Favourite pasta (here, I used Peacock brand brown rice pasta – pictured below)
How to:
- Cook your pasta according to instructions
- While your pasta is cooking, heat olive oil and garlic in pan until fragrant
- Add chilli flakes to pan and cook another minute
- Add spinach and sauté until spinach is fully cooked
- Pour in the Pumpkin pasta sauce and cook until sauce starts to bubble
- Drain pasta and mix into the sauce mixture
- Plate and add about 1 tbsp of walnuts to each portion to garnish.
I sometimes like to add some extra chilli flakes as well!
I don’t know about you guys but I find I get the woooorst stomach aches from pasta so I always buy gluten free. Our options are getting so much better! We recently discovered this Peacock brand and I love it. It’s kind of like angel hair pasta. Another favourite is gogoquinoa. You’ve probably seen me post their pasta on my instagram stories… like ALL the time! You can buy the big bags of it at Costco for like $6!
Also, tip: This pasta sauce always goes on sale at superstore if you’re in Canada. I stock up!
