Pumpkin Pie Overnight Oats
Another pumpkin recipe! Listen, I’ve never claimed to be anything other than #basic. It’s fall, what do you expect? And besides, who doesn’t love pumpkin pie? And who doesn’t love a bowl of oatmeal? Hence pumpkin pie overnight oats!
Mornings around here have been extra busy lately. Between the new baby and getting Lily out the door to school, most days I have to choose between a shower or eating. (Spoiler Alert!: I usually choose the food). So I’ve been trying to do whatever I can to ensure my mornings are a little more efficient. Like, I’m sure Tyler would really appreciate me washing my hair.
Anything I can grab n go (or grab n eat in this case) is MUCH appreciated right now. More than ever before.
I love to spend time in the kitchen. It’s my happy place. And the fall always makes me want to spend more time cooking for the fam, testing out new recipes, and baking with Lily. Obviously, the 3-week-old baby is keeping me from that right now so even the chances I do get to prep some meals have to be snappy!
What I love about overnight oats is that they are super quick to whip up before tossing in the fridge. Whew. They take, like, 5 minutes. I scoop them into jars, toss em in the fridge, and now I have breakfast for the next morning.
..Okay, sometimes this is more like a snack right now. The baby is sucking all my calories out of me and I’ve never been so hungry in my life! It’s kind of disgusting how much food I’m able to put away right now.
Pumpkin Pie Overnight Oats
Ingredients
1 cup oats
1 cup unsweetened vanilla almond milk
1/2 cup pumpkin puree
1 tsp pumpkin pie spice
1 tsp vanilla extract
2 tbsp maple syrup
1 tbsp chia seeds
Mix all the ingredients together in a bowl, scoop into jars/containers, and toss in the fridge! Leave to chill overnight and there you have pumpkin pie overnight oats! I like to top with pecans and sometimes a little almond butter for some healthy fat.
