Technically, pico de gallo isn’t something you cook. But there’s chopping of vegetables involved and it’s healthy so you still feel successful after making a bowl of this.
I’m starting to notice a trend in my recipes…margaritas…nachos….more margaritas….Mexican salad bowl…I actually had tacos for dinner tonight…
Who doesn’t love some Mexican food though? You get lots of veggies, a little citrus, and lots of crunch.
Pico de Gallo is a great alternative to that store bought salsa. Not that there’s anything wrong with salsa, but I like to avoid buying anything pre-packaged or pre-made as much as possible.
It feels so good to know EXACTLY what goes in to your food. And who doesn’t feel successful after making a meal? The beauty of pico de gallo is it’s so light and crisp and refreshing. You can have it as a side to your Taco Tuesday. A snack while watching a game (or while having a drink with your boyfriend while he’s watching a game. Let’s be real here.) Bring it to a BBQ. Late night snack. Whatevs. It’s guilt-free.

You can’t piss anyone off. Score.
Now, here’s what you’ll need
4 Roma tomatoes
1 white onion
1/4 cup cilantro
Juice of 2 limes
Dash of salt
Pepper to taste (I like lots!)
Chop up the tomatoes, onion, and cilantro in a bowl. Squeeze those limes (use a fork to get extra juice). Dash that salt. Shake that pepper. Mix it all up.
You have Pico De Gallo! I love the tortillas from Que Pasa. You probably have gotten that though. Their chips are just so good! And there’s an unsalted one too… but if you bring those to the party, you’ll probably be pissing off some people.
