Cucumber Gin Fizz… A Refreshing Drink for St. Patty’s Day

St. Patty’s Day is this weekend and that calls for a new cocktail! I feel like everything should be celebrated with a new cocktail… St.Patty’s Day… New Years Day… Tuesday…
I had been wanting to share a cocktail with you guys for St.Patty’s that wasn’t green freaking beer! Enough!
When you get all cute and festive, the last thing you want is to be feeling full and bloated. Or worse yet, LOOKING full and bloated. It IS possible to look cute while still drinking like you’re Irish.
I just hope you can handle your alcohol because this cucumber gin fizz goes down pretty easy.
After being home with a stomach flu for a couple days and drinking nothing but peppermint and ginger tea… I knew I wanted to incorporate ginger. Always a nice kick in a cocktail. And you know how I love a cocktail with a “healthy” kick to it.
So here it is folks!
Cucumber Gin Fizz
What you need
1.5 oz gin
1 oz fresh squeezed lemon
1 oz ginger simple syrup
1 oz pureed cucumber
Club soda
Here’s what you need to do
To make the ginger simple syrup: In a pot, bring 1 cup water and 1 cup sugar to a boil. Remove from heat and add about 3-4 inches of fresh minced ginger. Let steep for a couple hours and strain.
To make cucumber puree: Simply blend a cucumber in a blender! I sometimes add a tbsp of water. And I find it’s best to remove the peel but not necessary.
In a martini shaker, shake with ice the cucumber puree, ginger syrup, lemon juice, and gin. Pour in glass, with the ice. Add more ice and top with soda! Add in a couple extra cucumber slices for garnish.
Sippy sip.

And so many perks if you’re gonna be having a few. I mean, soda: no calories. Ginger… yes there is some sugar in the simple syrup… but with the portion in each cocktail, there’s not a ton.(Still less than adding juice) And the ginger is always nice on a stomach. Cucumber… sooo hydrating! I love a cucumber cocktail (Have you tried the cucumber sour yet!?)
How do you guys celebrate St.Patty’s? Living in Cape Breton, I feel like it’s just any other day: Fiddle music. Kilts. And I have no freaking idea what anyone is ever saying. (seriously, have you ever heard a Cape Breton accent?)
It’s kind of mine and Tyler’s anniversary though. By anniversary I mean, 4 years ago at this time, he joined some friends and I after I had 1 too many Guinness’ and like 5 too many shots of Jameson. Before I knew it I was sitting on his tailgate at a lake (very country music video, I know) drinking my parents homemade wine right from the bottle. Basically, that was our first date.
I like to think we’ve both come a long ways. This year it will be spent drinking a few cucumber gin fizz’s after Lily goes to bed and probably watching a movie. #adulting.
