Healthy Banana Oat Pancakes
About a week ago now we officially moved out of our place and have been staying with my parents until we head on our way out East to Nova Scotia. Only 2 more days!!!!

I’m so excited but MY GOD is it hard to eat healthy, or at least balanced, when you’re living out of a suitcase and your schedule is all thrown off.
We’ve been trying to find simple, easy, healthy things to eat without spending $$$ eating out.
It’s not easy. But we have a few favourites we rely on.
There’s really nothing like a healthy spin on your favourite comfort foods.
Especially when they’re quick. And easy.
4 ingredients. 1 bowl. Can’t go wrong.
These pancakes are great post workout too! (High in protein!) and well, I mean, they’re pancakes. So there’s that. Lily just LOVES them so we make them pre-daycare to keep her full longer until snack time.
Also, they’re DAIRY FREE. BONUS!
Healthy Banana Oat Pancakes
Here’s what you’ll need:
2 bananas
4 eggs
2/3 cup of oats
approx. 1 tsp cinnamon
Here’s what you’ll do:
In a medium bowl, smash the bananas. Add the eggs and whisk with a fork. Add the oats and cinnamon and mix well. Heat a pan on medium with your choice of butter or spray (if needed) I like to use coconut oil. Heat for about 2 mins/side.
Top with syrup, almond butter, berries…. whatever your little heart desires.
Swap regular oats for gluten free to make these a great GF breakfast
TIP: If you only have large flake oats on hand, pulse them in a blender a few times before mixing.

One thing I’m really excited for about Nova Scotia is the farms! I can’t wait to take Lily out fruit and veggie picking and to cook healthy meals full of fresh whole foods.
